- 2 tbsp vegetable oil
- 2 tbsp all-purpose flour
- 3 tbsp chili powder
- 1 tsp ground cumin
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp dried oregano
- 2 cups low-sodium chicken or vegetable broth
- 1 cup tomato sauce
- 1 tsp apple cider vinegar
- ½ tsp salt
- ¼ tsp black pepper
- Optional: Chili powder fresh cilantro

Heat oil in a saucepan, whisk in flour for 1–2 minutes.
Add chili powder, cumin, garlic powder, onion powder, and oregano; cook for 30 seconds.
Whisk in broth, tomato sauce, vinegar, salt, and pepper. Taste and adjust the seasoning.
Simmer for 10–12 minutes until thickened.
Serve in a white ceramic bowl with chili powder, cilantro, enchiladas, and margarita.
