French Onion Soup Recipe: Rich and Comforting

- 4 large yellow onions sliced
- 4 tbsp butter
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp pepper
- 1 tsp sugar optional
- 2 cloves garlic minced
- ½ cup dry white wine
- 6 cups beef broth
- 1 tbsp Worcestershire sauce
- 2 thyme sprigs
- 1 bay leaf
- 8 baguette slices
- 1 ½ cups Gruyère cheese shredded
- ¼ cup Parmesan cheese grated
- Optional: Thyme sprigs
- Suggested Pairings: Salad wine
Melt butter and oil; cook onions with salt, pepper, and sugar for 30-40 minutes until caramelized.
Add garlic and cook for 1 minute; add wine and simmer for 2-3 minutes.
Add broth, Worcestershire, thyme, and bay leaf; simmer for 20-25 minutes. Remove thyme and bay leaf.
Broil baguette slices for 1-2 minutes per side.
Ladle soup into crocks, top with baguette and cheeses; broil for 2-3 minutes.
Garnish with thyme; serve with salad and wine.
