Gazpacho Recipe: Refreshing and Chilled
Classic Spanish Gazpacho with refreshing, chilled flavor.

- 2 lbs ripe tomatoes chopped
- 1 medium cucumber peeled and chopped
- 1 red bell pepper seeded and chopped
- ½ small red onion chopped
- 1 clove garlic minced
- 2 tbsp sherry vinegar
- ¼ cup extra-virgin olive oil
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ tsp ground cumin optional
- 1 slice white bread soaked in 1/4 cup water (optional)
- Optional: Diced cucumber parsley, croutons
- Suggested Pairings: Crusty bread white wine
Chop tomatoes, cucumber, bell pepper, and onion; mince garlic; soak bread.
Blend all ingredients until smooth.
Add vinegar, oil, salt, pepper, and cumin; blend. Taste and adjust seasoning.
Strain for smoothness (optional); chill 2 hours.
Serve in white ceramic bowls with cucumber, parsley, bread, and wine.
