Ingredients
  

  • 1 lb carrots
  • 2 tbsp butter
  • 2 tbsp honey
  • 1 tbsp brown sugar
  • ½ cup water
  • ½ tsp salt
  • ½ tsp thyme
  • Optional: Parsley
  • Suggested Pairings: Chicken potatoes

Instructions
 

  • Slice carrots ½-inch thick.
  • Melt butter; add carrots, salt, and pepper.
  • Stir in honey, sugar, water, and thyme.
  • Cover; simmer 8–10 min.
  • Uncover; reduce to a glaze 3–5 min.
  • Taste and adjust.
  • Serve in a white ceramic bowl.

Notes

  • Cut evenly for tenderness.
  • Store in fridge 4 days.
  • Try the maple or orange variation.
  • Pair with white wine.
