Instructions
Heat oil in a saucepan; sauté onion for 4–5 minutes, add garlic for 30 seconds.
Stir in tomato paste, cook 1–2 minutes. Add tomatoes, oregano, basil, red pepper flakes, sugar, salt, and pepper. Taste and adjust the seasoning.
Simmer for 25–30 minutes. Stir in fresh basil, cook 2–3 minutes.
Blend for a smooth texture (optional).
Serve in a white ceramic bowl with basil, pasta, and wine.
Notes
Use San Marzano tomatoes for the best flavor.
Store in the fridge for 5 days or freeze for 3 months.
Try spicy or vegetable variations.
Pair with garlic bread.
