Ingredients
  

  • Dry Pancake Mix:
  • 4 cups all-purpose flour
  • 3 tbsp baking powder
  • 1 tsp baking soda
  • ¼ cup granulated sugar
  • 1 tsp salt
  • For Pancakes per batch:
  • 1 cup dry pancake mix
  • 1 large egg
  • ¾ cup milk
  • 2 tbsp melted butter or oil
  • 1 tsp vanilla extract optional
  • Optional: Fresh berries powdered sugar, maple syrup
  • Suggested Pairings: Bacon orange juice

Instructions
 

  • Whisk flour, baking powder, baking soda, sugar, and salt for a dry mix; store airtight.
  • Combine 1 cup mix, egg, milk, butter, and vanilla; whisk lightly. Taste and adjust the seasoning.
  • Heat skillet; grease lightly. Pour 1/4 cup batter per pancake; cook 2–3 minutes per side.
  • Stack on a white ceramic plate; garnish with berries and powdered sugar.
  • Serve with syrup, bacon, and juice.

Notes

  • Store dry mix for 6 months.
  • Refrigerate cooked pancakes for 3 days or freeze for 2 months.
  • Try vegan or blueberry variations.
  • Pair with scrambled eggs.
