Instructions
Chop tomatoes; optionally blanch and peel.
Sauté onion in olive oil 5–6 min; add garlic for 1 min.
Add tomato paste, tomatoes, sugar, salt, pepper, and herbs; taste and adjust.
Simmer 25–30 min until thickened.
Blend for a smooth sauce or leave chunky.
Serve in a white ceramic bowl with basil.
Notes
Use ripe tomatoes for the best flavor.
Store in fridge for 5 days or freeze for 3 months.
Try a creamy or roasted variation.
