yellow cornmeal

all-purpose flour

granulated sugar

large egg

buttermilk

finely chopped yellow onion
Vegetable oil
for frying, about 4 cups
Optional: Chopped parsley

Instructions
Mix cornmeal, flour, baking powder, soda, salt, pepper, and sugar; combine with egg, buttermilk, and onion.
Taste and adjust batter (cook a test piece).
Heat oil to 350°F in a skillet.
Fry tablespoon-sized batter portions for 2–3 minutes per side until golden.
Drain on paper towels.
Serve on a white ceramic platter with parsley, sauce, fish, or tea.
Notes
Maintain oil at 350°F for crispiness.
Store in the fridge for 3 days or freeze for 2 months.
Try a vegan or cheesy variation.
