Ingredients
  

  • 4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 1 tbsp granulated sugar optional
  • 1 ¾ cups buttermilk cold
  • ¼ cup unsalted butter melted (optional)
  • Optional: Butter jam, honey
  • Suggested Pairings: Irish tea coffee

Instructions
 

  • Preheat oven to 425°F; prepare a baking sheet or skillet.
  • Whisk flour, baking soda, salt, and sugar.
  • Taste and adjust the dry mixture.
  • Add buttermilk and butter; form a shaggy dough.
  • Shape into a round loaf; score a cross on top.
  • Bake 35–45 min until golden. Serve on a white ceramic platter with butter or stew.

  • Avoid overmixing for a tender crumb.
  • Store at room temperature for 2 days or freeze for 3 months.
