- 8 oz spaghetti or linguine
- 2 boneless skinless chicken breasts (about 1 lb)
- 2 tbsp olive oil
- 3 cloves garlic minced
- ¼ cup fresh lemon juice from about 2 lemons
- 1 tbsp lemon zest
- ½ cup chicken broth
- ¼ cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- Optional: 2 tbsp chopped fresh parsley for garnish
- Optional: 1/4 tsp red pepper flakes for a spicy kick
Cook pasta al dente; reserve 1/2 cup pasta water, drain.
Season and cook chicken in 1 tbsp oil for 5-6 minutes per side; slice.
Sauté garlic in 1 tbsp oil; add lemon juice, zest, broth, and cream.
Simmer 3-4 minutes; stir in Parmesan and optional flakes.
Toss pasta and chicken in sauce, adding pasta water if needed.
