Ingredients
  

  • 2 lbs Yukon Gold or red potatoes cubed
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • ½ tsp smoked paprika
  • ½ tsp dried thyme
  • Optional: Fresh parsley fresh rosemary
  • Suggested Pairings: Red wine grilled meats

Instructions
 

  • Preheat oven to 425°F; prepare baking sheet.
  • Pat potatoes dry; cut into 1-inch cubes.
  • Toss with oil, salt, pepper, garlic powder, rosemary, paprika, and thyme; taste and adjust.
  • Spread on a baking sheet; roast 35–45 min, flipping halfway.
  • Serve in a white ceramic bowl with parsley, wine, and meats.

Notes

  • Pat potatoes dry for crispiness.
  • Store in fridge for 4 days or freeze for 1 month.
  • Try a spicy or Parmesan variation.
