Instructions
Preheat oven to 425°F; prepare baking sheet.
Pat potatoes dry; cut into 1-inch cubes.
Toss with oil, salt, pepper, garlic powder, rosemary, paprika, and thyme; taste and adjust.
Spread on a baking sheet; roast 35–45 min, flipping halfway.
Serve in a white ceramic bowl with parsley, wine, and meats.
Notes
Pat potatoes dry for crispiness.
Store in fridge for 4 days or freeze for 1 month.
