- 1 pint 16 oz fresh shucked oysters, with liquor
- 4 tbsp unsalted butter
- 1 small onion finely chopped (or 2 shallots)
- 1 celery stalk finely chopped
- 2 cups whole milk
- 1 cup heavy cream
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp paprika optional
- 1 tbsp fresh parsley chopped, for garnish
- Optional: 1/2 tsp Worcestershire sauce or hot sauce
- Optional: Oyster crackers or crusty bread for serving
Drain oysters, reserving liquor; check for shell fragments.
Melt butter in a saucepan; cook onion and celery until soft, 5-7 minutes.
Add oyster liquor, milk, cream, salt, pepper, and optional paprika or sauce; heat until just below simmering, 5-8 minutes.
Add oysters; cook until edges curl, 3-5 minutes.
Adjust seasoning; garnish with parsley.
Serve hot with oyster crackers or bread.
