Ingredients

all-purpose flour

salt

sugar

cold
unsalted butter, cubed

Optional: Egg wash
1 egg + 1 tsp water, coarse sugar

Instructions
Mix flour, salt, and sugar; cut in butter until crumbly.
Add ice water, form dough; divide into 2 disks, and chill for 1 hour.
Roll into a 12-inch circle and fit into a 9-inch pie dish; crimp edges.
Chill for 30 minutes (optional); blind bake at 375°F for 25 minutes if needed.
Brush with egg wash, sprinkle sugar (for sweet pies).
Serve in a white ceramic dish with fillings and coffee.
Notes
Keep butter cold for flakiness.
Store dough in the fridge for 2 days or freeze for 3 months.
Try a gluten-free variation.
