Pizzelle Recipe: Crisp and Delicate

Crisp, delicate Italian anise-vanilla waffle cookies

Ingredients
  

  • 3 large eggs
  • ¾ cup sugar
  • ½ cup melted butter cooled
  • 1 tbsp vanilla
  • 1 tbsp anise extract
  • cups flour
  • 2 tsp baking powder

Instructions
 

  • Whisk eggs + sugar until pale.
  • Add cooled butter + extracts.
  • Fold in flour, baking powder, salt.
  • Drop tablespoon onto hot pizzelle iron.
  • Cook 30–60 sec until golden.
  • Cool on rack; dust with powdered sugar.

Notes

  • Let the butter cool before adding
  • Store airtight up to 1 month
  • Try a lemon or a chocolate variation
  • Perfect with espresso
