Ingredients
  

  • 3 large leeks white/light green only
  • 3 tbsp butter
  • 3 cloves garlic
  • lbs Yukon Gold potatoes
  • 6 cups broth
  • Bay leaf + thyme
  • ½ cup cream optional

Instructions
 

  • Clean and slice leeks.
  • Sauté in butter until soft.
  • Add garlic, potatoes, broth, and herbs.
  • Simmer 15–20 min until tender.
  • Blend smooth; stir in cream.
  • Adjust seasoning; serve hot.

  • Clean leeks thoroughly
  • Make ahead—tastes better day 2
  • Freezes 3 months (add cream after thawing)
  • Try a cold vichyssoise variation
