small yellow onion

large egg
beaten

all-purpose flour

kosher salt

black pepper

baking powder

vegetable oil
Optional: Fresh chives
sour cream

Instructions
Grate potatoes and onion; squeeze out liquid.
Mix with egg, flour, salt, pepper, and baking powder.
Taste and adjust the batter with salt or pepper.
Heat oil in a skillet over medium-high heat.
Fry 1/4-cup patties 3–4 minutes per side until golden.
Drain on paper towels.
Serve on a white ceramic platter with applesauce.
Notes
Squeeze potatoes well for crispiness.
Store in the fridge for 3 days or freeze for 2 months.
