Ingredients
  

  • 2 large russet potatoes 1.5 lbs, peeled
  • 1 small yellow onion
  • 1 large egg beaten
  • 3 tbsp all-purpose flour
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • ¼ tsp baking powder
  • ¼ cup vegetable oil
  • Optional: Fresh chives sour cream
  • Suggested Pairings: Applesauce sparkling water

Instructions
 

  • Grate potatoes and onion; squeeze out liquid.
  • Mix with egg, flour, salt, pepper, and baking powder.
  • Taste and adjust the batter with salt or pepper.
  • Heat oil in a skillet over medium-high heat.
  • Fry 1/4-cup patties 3–4 minutes per side until golden.
  • Drain on paper towels.
  • Serve on a white ceramic platter with applesauce.

Notes

  • Squeeze potatoes well for crispiness.
  • Store in the fridge for 3 days or freeze for 2 months.
