Ingredients
  

  • 1 8–10 lb bone-in prime rib roast (4 ribs)
  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 2 tbsp olive oil
  • 4 garlic cloves minced
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Optional: Fresh rosemary parsley
  • Suggested Pairings: Red wine mashed potatoes

Instructions
 

  • Pat roast dry; let sit at room temperature for 1–2 hours.
  • Mix olive oil, garlic, herbs, salt, pepper, and powders into a paste.
  • Taste and adjust the paste with salt or herbs.
  • Rub paste over the roast.
  • Preheat oven to 450°F; roast for 15 minutes.
  • Reduce to 325°F; roast 2–2.5 hours until 120–140°F internally.
  • Rest for 20–30 minutes; slice.
  • Serve on a white ceramic platter with vegetables.

Notes

  • Use a meat thermometer for doneness.
  • Store in the fridge for 4 days or freeze for 3 months.
  • Try a spicy or mustard-crusted variation.
  • Pair with horseradish sauce.
