- 1 8–10 lb bone-in prime rib roast (4 ribs)
- 2 tbsp kosher salt
- 1 tbsp black pepper
- 2 tbsp olive oil
- 4 garlic cloves minced
- 2 tbsp fresh rosemary chopped
- 2 tbsp fresh thyme chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- Optional: Fresh rosemary parsley
- Suggested Pairings: Red wine mashed potatoes
Pat roast dry; let sit at room temperature for 1–2 hours.
Mix olive oil, garlic, herbs, salt, pepper, and powders into a paste.
Taste and adjust the paste with salt or herbs.
Rub paste over the roast.
Preheat oven to 450°F; roast for 15 minutes.
Reduce to 325°F; roast 2–2.5 hours until 120–140°F internally.
Rest for 20–30 minutes; slice.
Serve on a white ceramic platter with vegetables.
