Ingredients
  

  • 1 cup quinoa
  • Cucumber tomatoes, red onion
  • Bell pepper olives, feta
  • Parsley + mint
  • Lemon-olive oil dressing

Instructions
 

  • Cook and cool quinoa.
  • Chop all veggies + herbs.
  • Whisk dressing.
  • Toss everything together.
  • Chill 30 min (or up to 5 days).
  • Serve cold or room temperature.

Notes

  • Rinse quinoa first
  • Keeps for 5 days in the fridge
