Ingredients

quinoa
Cucumber
tomatoes, red onion
Bell pepper
olives, feta
Parsley + mint
Lemon-olive oil dressing
Instructions
Cook and cool quinoa.
Chop all veggies + herbs.
Whisk dressing.
Toss everything together.
Chill 30 min (or up to 5 days).
Serve cold or room temperature.
