Fluffy, fragrant classic rice pilaf

Ingredients
  

  • cups basmati rice
  • ½ cup orzo
  • 1 small onion
  • 2 tbsp butter + 2 tbsp oil
  • 3 cups broth
  • Bay leaf

Instructions
 

  • Sauté onion, toast orzo until golden.
  • Add rice + garlic; toast 2 min.
  • Add hot broth + seasonings.
  • Boil, then simmer covered 15–18 min.
  • Rest covered for 10 min off heat.
  • Fluff and add nuts/herbs.

Notes

  • Never lift the lid while cooking
  • Reheats perfectly
  • Try Mediterranean or mushroom variation
