Ingredients
  

  • 2 delicata squash
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 tbsp thyme
  • Optional: Flaky salt
  • Suggested Pairings: Chicken quinoa

Instructions
 

  • Preheat oven to 425°F and line a baking sheet.
  • Wash, trim, halve, and seed squash.
  • Slice into ½-inch half-moons.
  • Toss with oil and seasonings.
  • Spread in a single layer.
  • Roast 20–25 min, flip halfway.
  • Rest 2 min.
  • Serve in a white ceramic bowl.

Notes

  • Don’t peel—skin is edible.
  • Store in fridge 5 days or freeze 3 months.
  • Try a maple or balsamic variation.
  • Pair with warm honey.
