Rotel Dip Recipe: Cheesy and Zesty

Ingredients
  

  • 1 lb ground beef 80/20 lean
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 1 10 oz can Rotel diced tomatoes and green chilies, undrained
  • 16 oz Velveeta cheese cubed
  • ½ cup shredded cheddar cheese
  • ¼ cup milk optional
  • Optional: Fresh cilantro diced tomatoes
  • Suggested Pairings: Beer tortilla chips

Instructions
 

  • Cook beef with spices in a skillet for 6–8 minutes; drain fat.
  • Add Rotel; cook for 2 minutes.
  • Add Velveeta and cheddar; melt over low heat, stirring, for 5–7 minutes.
  • Taste and adjust with salt or chili powder.
  • Transfer to a slow cooker or bowl to keep warm.
  • Serve in a white ceramic bowl with cilantro.

Notes

  • Use Velveeta for smooth melting.
  • Store in the fridge for 3 days or freeze for 2 months.
  • Try a vegetarian or spicy variation.
  • Pair with a sliced baguette.
