10 oz can Rotel diced tomatoes and green chilies, undrained

Velveeta cheese

shredded cheddar cheese

Instructions
Cook beef with spices in a skillet for 6–8 minutes; drain fat.
Add Rotel; cook for 2 minutes.
Add Velveeta and cheddar; melt over low heat, stirring, for 5–7 minutes.
Taste and adjust with salt or chili powder.
Transfer to a slow cooker or bowl to keep warm.
Serve in a white ceramic bowl with cilantro.
Notes
Use Velveeta for smooth melting.
Store in the fridge for 3 days or freeze for 2 months.
Try a vegetarian or spicy variation.
