canned salmon
drained

cup
breadcrumbs

finely chopped onion

large eggs

mayonnaise

tbsp
Dijon mustard

tbsp
fresh lemon juice

tsp
Old Bay seasoning

tsp
black pepper

tbsp
chopped fresh parsley

tbsp
vegetable oil
Optional: Fresh dill

Instructions
Drain and flake salmon in a bowl.
Mix with breadcrumbs, onion, eggs, mayonnaise, mustard, lemon juice, Old Bay, pepper, and parsley; taste and adjust.
Form into 8 patties; chill 15 min (optional).
Heat oil; fry patties 3–4 min per side until golden.
Serve on a white ceramic platter with dill, wine, and tartar sauce.
Notes
Drain salmon well for firm patties.
Store in fridge for 3 days or freeze for 2 months.
Try a gluten-free or spicy variation.
Pair with coleslaw.
