Ingredients
  

  • 1 lb large shrimp peeled
  • 3 cups cooked white rice chilled
  • 2 tbsp vegetable oil divided
  • 2 large eggs beaten
  • ½ cup diced onion
  • ½ cup diced carrots
  • ½ cup frozen peas thawed
  • 2 cloves garlic minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp sesame oil
  • ¼ tsp black pepper
  • 2 green onions sliced
  • Optional: Extra green onions sesame seeds
  • Suggested Pairings: Green tea egg rolls

Instructions
 

  • Cook rice in advance; chill. Pat shrimp dry.
  • Heat 1 tbsp oil; cook shrimp 2–3 min per side; remove.
  • Scramble eggs in a skillet; remove.
  • Sauté onion, carrots, garlic, and peas in 1 tbsp oil.
  • Add rice, soy sauce, oyster sauce, sesame oil, and pepper; stir-fry 3–4 min.
  • Return shrimp and eggs; taste and adjust seasoning.
  • Serve in a white ceramic bowl with green onions, tea, and egg rolls.

Notes

  • Use day-old rice for the best texture.
  • Store in fridge for 3 days or freeze for 1 month.
  • Try a gluten-free or spicy variation.
  • Pair with cucumber salad.
