Instructions
Cook rice in advance; chill. Pat shrimp dry.
Heat 1 tbsp oil; cook shrimp 2–3 min per side; remove.
Scramble eggs in a skillet; remove.
Sauté onion, carrots, garlic, and peas in 1 tbsp oil.
Add rice, soy sauce, oyster sauce, sesame oil, and pepper; stir-fry 3–4 min.
Return shrimp and eggs; taste and adjust seasoning.
Serve in a white ceramic bowl with green onions, tea, and egg rolls.
Notes
Use day-old rice for the best texture.
Store in fridge for 3 days or freeze for 1 month.
Try a gluten-free or spicy variation.
Pair with cucumber salad.
