Snickerdoodle Bars Recipe: Chewy, & Buttery

Thick, chewy snickerdoodle blondie bars with cinnamon-sugar crust

Ingredients
  

  • 1 cup unsalted butter melted
  • 2 cups granulated sugar
  • 2 eggs + 1 yolk
  • 1 tbsp vanilla
  • cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking powder
  • ½ tsp salt
  • cup sugar + 2 tbsp cinnamon for swirl & topping

Instructions
 

  • Mix melted butter, sugar, eggs, and vanilla.
  • Fold in dry ingredients just until combined.
  • Layer half the dough, cinnamon sugar, remaining dough, and more cinnamon sugar.
  • Bake at 350°F 26–32 min until edges are golden.
  • Cool completely; cut into squares.

Notes

• Cream of tartar = authentic snickerdoodle tang
• Slightly under-bake for chewiest texture
• Freezes perfectly
