granulated sugar

all-purpose flour

kosher salt

unsalted butter
melted

baking soda

egg yolk + 1 tbsp water
Coarse sea salt

Instructions
Combine water, yeast, and sugar; let sit 5–10 minutes until foamy.
Add flour, salt, and butter; knead 5–7 minutes until smooth.
Taste and adjust the dough with salt.
Let rise 1–1.5 hours until doubled.
Divide into 8 pieces; shape into pretzels.
Boil in baking soda water for 30 seconds each.
Brush with egg wash; sprinkle with salt.
Bake at 450°F for 12–15 minutes.
Serve on a white ceramic platter with mustard.
Notes
Boil briefly for a chewy texture.
Store at room temperature for 2 days or freeze for 2 months.
Try a vegan or cheesy variation.
Pair with cheese sauce.
