- Spinach Pasta:
- 1 cup fresh spinach leaves packed
- 2 large eggs
- 2 cups all-purpose flour
- ½ tsp kosher salt
- 1 tbsp olive oil
- Garlic Olive Oil Sauce:
- ¼ cup olive oil
- 3 garlic cloves thinly sliced
- ¼ tsp red pepper flakes optional
- ¼ cup grated Parmesan cheese
- ¼ tsp kosher salt
- ¼ tsp black pepper
- ¼ cup reserved pasta water
- Optional: Fresh spinach extra Parmesan
- Suggested Pairings: White wine garlic bread
Blanch and puree spinach with eggs.
Mix flour, salt, spinach puree, and oil; knead 5–7 minutes. Rest 30 minutes.
Taste and adjust the dough with salt.
Roll dough to 1/16-inch; cut into shapes.
Cook pasta 2–4 minutes until al dente; reserve 1/4 cup water.
Heat oil, garlic, and red pepper flakes; cook 1–2 minutes.
Taste and adjust sauce; toss with pasta and Parmesan.
Serve in a white ceramic bowl with salad.
