fresh lemon juice

1.75 oz package fruit pectin
Optional: Fresh strawberry

Instructions
Mash or pulse strawberries.
Combine strawberries, lemon juice, and pectin in a pot; bring to a rolling boil.
Add sugar; boil 1 min, stirring.
Taste and adjust with sugar or lemon juice.
Test on a chilled plate for gel.
Ladle into jars; can for 10 min or refrigerate.
Serve in clear jars or a white ceramic bowl with a strawberry.
Notes
Use fresh or frozen strawberries.
Store in fridge for 3 weeks or freeze for 6 months.
Try a low-sugar or spiced variation.
