Ingredients
  

  • 2 lbs fresh strawberries hulled and chopped
  • 4 cups granulated sugar
  • ΒΌ cup fresh lemon juice
  • 1 1.75 oz package fruit pectin
  • Optional: Fresh strawberry mint sprig
  • Suggested Pairings: Tea scones

Instructions
 

  • Mash or pulse strawberries.
  • Combine strawberries, lemon juice, and pectin in a pot; bring to a rolling boil.
  • Add sugar; boil 1 min, stirring.
  • Taste and adjust with sugar or lemon juice.
  • Test on a chilled plate for gel.
  • Ladle into jars; can for 10 min or refrigerate.
  • Serve in clear jars or a white ceramic bowl with a strawberry.

Notes

  • Use fresh or frozen strawberries.
  • Store in fridge for 3 weeks or freeze for 6 months.
  • Try a low-sugar or spiced variation.
  • Use on biscuits or in desserts.
