short-grain sushi rice

water

rice vinegar

granulated sugar

salt
Optional: Sesame seeds
nori strips

Instructions
Rinse rice until water runs clear; drain.
Boil rice with water, simmer 15 minutes, rest 10 minutes.
Heat vinegar, sugar, and salt until dissolved. Taste and adjust the seasoning.
Fold the vinegar mixture into the rice, fanning to cool.
Serve in a white ceramic bowl with sesame seeds, soy sauce, and tea.
Notes
Rinse rice well for the best texture.
Store at room temperature for 6 hours; do not refrigerate.
Try low-sugar or herbed variations.
Pair with wasabi.
