1-inch thick

olive oil
Lemon zest + juice
3
cloves
garlic

tsp
dried oregano
Salt & pepper
Salmoriglio: olive oil
lemon, parsley, oregano, garlic
Instructions
Marinate swordfish 15–30 min.
Grill or sear 3–4 min per side (145°F internal).
Rest 5 min.
Spoon warm salmoriglio over top.
Notes
• Don’t overcook—145°F max
• Fresh salmoriglio is everything
• Freezes perfectly
• Try blackened or teriyaki variation
