Ingredients
  

  • 4 swordfish steaks 1-inch thick
  • 3 tbsp olive oil
  • Lemon zest + juice
  • 3 cloves garlic
  • 2 tsp dried oregano
  • Salt & pepper
  • Salmoriglio: olive oil lemon, parsley, oregano, garlic

Instructions
 

  • Marinate swordfish 15–30 min.
  • Grill or sear 3–4 min per side (145°F internal).
  • Rest 5 min.
  • Spoon warm salmoriglio over top.

Notes

• Don’t overcook—145°F max
• Fresh salmoriglio is everything
• Freezes perfectly
• Try blackened or teriyaki variation
