Tacos al Pastor Recipe: Flavorful and Festive

Ingredients
  

  • 2 lbs pork shoulder thinly sliced
  • 3 dried guajillo chiles stemmed, seeded
  • 2 dried ancho chiles stemmed, seeded
  • ½ cup pineapple juice
  • ¼ cup white vinegar
  • 3 cloves of garlic
  • 1 small white onion quartered
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp ground achiote optional
  • 1 cup fresh pineapple diced
  • 16 small corn tortillas
  • Optional: Fresh cilantro diced pineapple, lime wedges, diced onion
  • Suggested Pairings: Mexican beer refried beans

Instructions
 

  • Boil chiles 10 min; drain, reserve 1/4 cup liquid.
  • Blend chiles, liquid, juice, vinegar, garlic, onion, spices; taste and adjust.
  • Marinate pork 4 hours or overnight.
  • Cook pork 3–4 min per side; dice. Cook pineapple 2–3 min.
  • Warm tortillas.
  • Assemble tacos with pork, pineapple; serve on a white ceramic platter with cilantro, pineapple, onion, lime, beer, and beans.

Notes

  • Marinate overnight for the best flavor.
  • Store pork in the fridge for 3 days or freeze for 2 months.
  • Try a vegetarian or spicy variation.
  • Pair with salsa.
