pork shoulder
thinly sliced

dried guajillo chiles

Instructions
Boil chiles 10 min; drain, reserve 1/4 cup liquid.
Blend chiles, liquid, juice, vinegar, garlic, onion, spices; taste and adjust.
Marinate pork 4 hours or overnight.
Cook pork 3–4 min per side; dice. Cook pineapple 2–3 min.
Warm tortillas.
Assemble tacos with pork, pineapple; serve on a white ceramic platter with cilantro, pineapple, onion, lime, beer, and beans.
Notes
Marinate overnight for the best flavor.
Store pork in the fridge for 3 days or freeze for 2 months.
Try a vegetarian or spicy variation.
