Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 1 red bell pepper chopped
  • 2 medium carrots chopped
  • 2 garlic cloves minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 15 oz can black beans, drained
  • 1 15 oz can kidney beans, drained
  • 1 15 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 1 cup vegetable broth
  • 1 cup frozen corn
  • Optional: Fresh cilantro sour cream, and cheddar cheese
  • Suggested Pairings: Iced tea cornbread

Instructions
 

  • Sauté onion, bell pepper, and carrots in olive oil 5–7 min; add garlic for 1 min.
  • Add spices; cook 1–2 min; taste and adjust.
  • Add beans, tomatoes, tomato sauce, and broth; simmer 20–25 min.
  • Add corn in the last 5 min.
  • Serve in a white ceramic bowl with cilantro.

Notes

  • Rinse beans to reduce sodium.
  • Store in the fridge for 5 days or freeze for 3 months.
  • Try a vegan or spicy variation.
  • Pair with tortilla chips.
