15 oz can black beans, drained

15 oz can kidney beans, drained

15 oz can diced tomatoes

8 oz can tomato sauce

cup
vegetable broth

cup
frozen corn
Optional: Fresh cilantro
sour cream, and cheddar cheese

Instructions
Sauté onion, bell pepper, and carrots in olive oil 5–7 min; add garlic for 1 min.
Add spices; cook 1–2 min; taste and adjust.
Add beans, tomatoes, tomato sauce, and broth; simmer 20–25 min.
Add corn in the last 5 min.
Serve in a white ceramic bowl with cilantro.
Notes
Rinse beans to reduce sodium.
Store in the fridge for 5 days or freeze for 3 months.
Try a vegan or spicy variation.
Pair with tortilla chips.
