fettuccine, penne, or linguine

whole milk

heavy cream

grated Parmesan cheese

Instructions
Cook pasta until al dente; drain, reserving 1/2 cup pasta water.
Melt butter in a saucepan; cook garlic 1 minute.
Whisk in flour for 1–2 minutes to form a roux.
Gradually add milk and cream, whisking until thickened.
Stir in Parmesan, salt, pepper, and nutmeg.
Taste and adjust with salt or Parmesan.
Toss pasta with sauce; add pasta water if needed.
Serve in a white ceramic bowl with salad or bread.
Notes
Use freshly grated Parmesan for smoothness.
Store in the fridge for 3 days; do not freeze.
Try a vegan or vegetable variation.
Pair with a green salad.
