Zucchini Bread Recipe: Moist and Spiced

Ingredients
  

  • 2 cups flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • 2 eggs
  • 1 cup sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 1 tsp vanilla
  • 1 ½ cups grated zucchini
  • ½ cup walnuts optional
  • Optional: Powdered sugar
  • Suggested Pairings: Butter coffee

Instructions
 

  • Grate zucchini, squeeze dry.
  • Whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Whisk eggs, sugars, oil, and vanilla; stir in zucchini.
  • Combine wet and dry ingredients; fold in nuts.
  • Preheat oven to 350°F. Pour into greased 9x5-inch pan; bake 55-65 min.
  • Cool 10 min in pan, then rack. Dust with sugar; serve with butter, coffee.

Notes

  • Squeeze zucchini for the best texture.
  • Store at room temperature for 3 days, freeze for 3 months.
  • Try a chocolate chip variation.
  • Pair with tea.
