heavy cream

large egg yolks

cornstarch

vanilla extract

Instructions
Cook 1/2 cup sugar and water to amber caramel; pour into 6 ramekins.
Heat milk and cream until steaming. Whisk 1/3 cup sugar, yolks, cornstarch, and salt.
Temper eggs with hot milk; cook until thickened.
Add vanilla; taste and adjust; strain. Pour into ramekins; chill 4 hours.
Invert or serve in cups; garnish with whipped cream, sea salt; pair with berries, coffee.
Notes
Swirl the caramel gently to avoid crystallization.
Store in the fridge for 3 days; don’t freeze.
Try salted caramel or a non-dairy variation.
Pair with shortbread.
