Caramel Pudding Recipe: Creamy and Decadent

Ingredients
  

  • ½ cup granulated sugar for caramel
  • 2 tbsp water
  • 2 cups whole milk
  • ½ cup heavy cream
  • cup granulated sugar for pudding
  • 3 large egg yolks
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • tsp kosher salt
  • Optional: Whipped cream sea salt flakes
  • Suggested Pairings: Fresh berries coffee

Instructions
 

  • Cook 1/2 cup sugar and water to amber caramel; pour into 6 ramekins.
  • Heat milk and cream until steaming. Whisk 1/3 cup sugar, yolks, cornstarch, and salt.
  • Temper eggs with hot milk; cook until thickened.
  • Add vanilla; taste and adjust; strain. Pour into ramekins; chill 4 hours.
  • Invert or serve in cups; garnish with whipped cream, sea salt; pair with berries, coffee.

Notes

  • Swirl the caramel gently to avoid crystallization.
  • Store in the fridge for 3 days; don’t freeze.
  • Try salted caramel or a non-dairy variation.
  • Pair with shortbread.
