Green Bean Salad Recipe: Crisp, Bright

Crisp, tangy fresh green bean salad with mustard vinaigrette.

Ingredients
  

  • lbs fresh green beans trimmed
  • 1 pint cherry tomatoes halved
  • ½ red onion thinly sliced
  • ½ cup chopped parsley or basil
  • ¼ cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic minced
  • 1 tsp honey

Instructions
 

  • Blanch beans 3–4 min; ice bath.
  • Soak onion slices in ice water.
  • Whisk vinaigrette.
  • Toss beans, tomatoes, onion, and herbs.
  • Dress and chill for 1+ hour.
  • Serve cold.
