Ingredients
  

  • 10 oz frozen spinach thawed and drained
  • 8 oz cream cheese softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 cup shredded mozzarella divided
  • ½ cup grated Parmesan
  • 2 cloves garlic minced
  • ½ tsp onion powder
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes optional
  • Optional: Paprika parsley
  • Suggested Pairings: Tortilla chips light beer

Instructions
 

  • Thaw and drain spinach; squeeze dry.
  • Melt cream cheese, sour cream, and mayonnaise over low heat for 3-4 minutes.
  • Add garlic, seasonings, spinach, 3/4 cup mozzarella, and Parmesan; cook for 2-3 minutes.
  • Optional: Bake in an 8x8 dish at 375°F with remaining mozzarella for 15-20 minutes.
  • Serve in a white ceramic bowl with paprika, chips, and beer.

Notes

  • Squeeze spinach dry to avoid watery dip.
  • Store in the fridge for 3-4 days; don’t freeze.
  • Try a vegan variation.
  • Pair with carrot sticks.
