Filling:

fresh spinach
chopped

crumbled feta cheese

cream cheese

Instructions
Preheat oven to 375°F. Cut pockets in chicken; season outside.
Mix spinach, feta, cream cheese, garlic, seasonings; taste and adjust.
Stuff chicken with 2–3 tbsp filling; secure with toothpicks.
Sear in olive oil 2–3 min per side.
Bake on a baking sheet for 20–25 minutes until 165°F.
Serve on a white ceramic platter with parsley.
Notes
Secure pockets to prevent leakage.
Store in fridge for 3 days or freeze for 2 months.
Try a low-fat or mozzarella variation.
Pair with couscous.
